Domaine Tollot-Beaut, in Chorey-lès-Beaune, was founded in 1880 by François Tollot and is now run by the family’s fifth generation, Nathalie Tollot and her two cousins, Olivier and Jean-Paul. Domaine Tollot-Beaut is famed for being among the first producers in the Côte d’Or to start domaine bottling in 1921. The grapes were 100% destemmed using a gentle destemming machine before being transferred to cement and stainless-steel tanks to begin fermentation for a 15-day period. The wine was then racked to 228 litre French oak barrels, 25% of which were new, where it was aged for 16 months prior to bottling and release. This wine has a bright ruby red colour in the glass. The nose is expressive, with aromas of red cherries and floral notes. The palate is lean with racy acidity and fine, velvety tannins.
